Sea urchin rice



2 cups (180ml x 2) Rice
450ml Water
1 tray Sea urchin
2 pieces shiso (beefsteakplant)
2 tablespoon Mirin
2 tablespoon Cooking wine
2 tablespoon Soy sauce
1 teaspoon Dashi stock powder


  1. Wash the rice and soak in water for 30 minutes.
  2. Slice the shiso.
  3. Drain the rice to remove any excess moisture.
  4. Add rice, water, mirin, cooking wine, soy sauce, dashi stock powder, sea urchin to a pot. Cover and cook over high heat.
  5. Once the mixture is boiled, reduce the heat to medium and cook for 2 minutes.
  6. After 2 minutes, reduce the heat to low and cook for another 3 minutes.
  7. Simmer for 5 minutes then turn off the heat and set aside for 10 minutes.
  8. Stir and transfer the rice to bowls. Sprinkle over the sliced shiso and serve.
